Blood orange barbequed zucchini

Juno Blood Orange agrumato olive oil adds an depth of flavour to savory and sweet dishes. This recipe is simple and great to use up a glut of zucchini

Ingredients:

Whole fresh zucchinis, washed and cut in half
Salt and Pepper
Juno Leccino extra virgin olive oil
Juno Blood Orange agrumato olive oil
Gas or charcoal BBQ

Method:

  1. Splash a little Juno Leccino EVOO over the BBQ hot plate.  You only need enough to stop the zucchinis from sticking.
  2. Place the halved zucchini onto the oiled BBQ hot plate and grill 20 seconds.  Turn and grill the other side for another 20 seconds.
  3. Place grilled zucchini onto a platter and drizzle with Juno Blood Orange agrumato olive oil
  4. Serve with a salad of slow roasted sweet potato, pumpkin, red onion and red capsicum drizzled with Juno Blood Orange agrumato olive oil
